Yummy

Brad and I love to grow things - from our 15-plant rose garden to yearly crops of veggies and herbs, we love seeing (and eating) the fruits of our labor. Last week I got to make all sorts of tasty recipes, using our latest crop of Meyer lemons. We have two miniature lemon trees, which, due to the nasty weather, have spent several months indoors. One tree gave us over two dozen lemons this year! Yummmmm....one of our favorite treats from our harvest was this batch of Lemon Blueberry Scones with homemade lemon curd drizzled on top. Contrary to what you might think from the picture, they are actually low-fat and whole-wheat! Scrumptious and sinless, too - who could ask for more? :)

Here is the recipe, for Mary Lou and anyone else interested:

• 1/4 cup sugar
• 2 cups whole wheat pastry flour
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/4 teaspoon baking soda
• 1 tablespoon grated lemon zest
• 1/4 cup Smart Balance margarine
• 1/2 cup buttermilk
• 1/4 cup egg whites
• 1 teaspoon vanilla
• 1 cup fresh blueberries

Spray a nonstick cookie sheet with cooking oil spray. In a large mixing bowl, combine sugar, flour, baking powder, salt, baking soda and zest. Cut in margarine with a pastry cutter until mixtures forms course crumbs. Stir together egg whites, buttermilk and vanilla. Add to crumb mixture and stir until just moistened. Gently fold in blueberries.

Form dough into a 7 inch circle on the cookie sheet and cut into 10 wedges.

Bake at 400 degrees for 15 to 20 minutes. Remove from oven and let cool for 5 minutes.
